Healthy Butternut Squash Chips/Fries

I have to say, Chips (Fries) are one of my absolute all time favourite foods. Unfortunately, they don't exactly fit in with a healthy lifestyle. Luckily there are so many healthy alternatives, there are a ton of vegetables that can imitate chips such as sweet potato, parsnip and butternut squash. 

I chose to use Butternut squash for this recipe, mostly because that's what I found in my kitchen! 


  • Butternut Squash (any size is fine, mine weighed around 2.5lbs) 
  • Salt
  • Seasonings (I used chili powder) 
  • Oil (I used rapeseed spray oil) 


  • Preheat oven to 200°C which is around 400°F 
  • Prepare your tray, I use foil to avoid the chips sticking to the tray 
  • Peel and cut the butternut into long strips, make sure they're even so that they all cook evenly
  • Put them in a large bowl and spray the oil on them, then mix with your hands so each one is covered 
  • You can then chose to put your seasoning on now or sprinkle it over once in the tray 
  • Pop them in the tray and leave them to bake for around 40 minutes, turning them over half way through so they cook evenly. You may also want to put them on grill for the last 10 minutes to ensure that they are crispy (if you like that) 

  • 200-250 Calories per portion
  • Less than 1g Fat
  • Roughly 50g Carbs 
  • 10g Fiber 
  • 10g Sugars 
  • 5g Protein
